The first global restaurant chain to carbon footprint every menu item has launched in London and Sustain was at the heart of the action at the media launch on Wednesday August 18.
Sustain measured the carbon footprints of each item which appears on the menu alongside the footprint of a comparable meat dish.
The first restaurants opened in New York in April with two more opening in London on Shaftesbury Avenue and Wardour Street.

"After all the work we put in to carbon footprint the menu, it's exciting to see it all in place. Judging from the success of the restaurants in New York, it's really helping customers understand the impact of their food choices and it all tastes great too! We wish Otarian every success," said Jean-Yves Cherruault, environmental accounting manager at Sustain.
